Goat Cheese Soufflé with Herbs and Lemon Zest




For a delicious and fresh dish I like to make this easy soufflé. Fresh picked herbs, goat cheese and lemon zest add fabulous flavour. It is perfect for Sunday brunch, lunch with the ladies or a light dinner. I also use large muffin tins to make individual soufflés and serve as an appetizer.

I made this soufflé this week for 2 co-workers and they both asked for the recipes after second helpings. Here you go ladies - enjoy! 


parsley, chives, rosemary, basil and lemon thyme

1 T butter
2 T bread crumbs
4 large eggs
8 oz goat cheese
1/2 cup sour cream
1 T basil
1 T chives
1 t  parsley
1 T lemon zest
1/2 t rosemary
1/2  t lemon thyme
1/2 t salt
1 clove garlic






Grease a 9 inch pan with butter and sprinkle with bread crumbs to coat. Separate eggs. Beat yolks for 3 minutes until thick and lemony. Add goat cheese and beat until smooth. Add sour cream, herbs, salt and garlic. Beat. Beat egg whites until stiff and fold into cheese mixture. Bake at 350 degrees for 30 -35 minutes.
