Phyllo Pizza

Phyllo Pizza is one of the greatest summer dishes. Fresh herbs, local tomatoes, cheese...yum! I usually serve it as a first course in place of salad. Here's how to make it.

Preheat oven to 375 degrees. 
Grease a cookie sheet with melted butter. Layer 6-8 sheets of phyllo pastry brushing each layer with melted butter.

 Arrange thinly sliced sweet onions on top of the phyllo.

Top the onions with grated mozzarella cheese. Place sliced tomatoes on top of the cheese layer. Season generously with salt and pepper.

 Sprinkle with chopped herbs. I use basil, dill and parsley.

 And finally, cover with fresh grated parmesan cheese.

Bake for 25 - 30 minutes. Remove from the oven and let sit for 5 minutes. Cut and serve.

Laurie I made this last night and we all but licked the pan! So yummy. Added a little leftover grilled chicken on half of it, and it stood on it's own as a meal!

Laurie, I made this last night and my husband absolutely loved it asked that it be put into the regular dinner rotation! I love dill and it really added such a nice flavour to the whole thing! Thanks so much for the sharing this great recipe!
