There is NOTHING better than summer fresh tomatoes. I love their beautiful red colour and sweet juicy flavour. ( Kevin, you don't know what you are missing).

Here are 3 of my favourite ways to enjoy our fabulous local tomatoes.

1. A toasted tomato sandwich - I like mine very basic with thick sliced tomatoes, mayo and salt and pepper - delish!

2. Phyllo Pizza - See a previous blog about this delicious family recipe -  Phyllo Pizza

3. Gazpacho - a refreshing cold soup for hot summer days. It is easy to make and I usually serve it in small cups as an appetizer or I will take it to the office for lunch.

1 large can of tomato juice
1 cucumber finely chopped
1/2 green pepper finely chopped
1 small onion minced
2 tomatoes peeled and cubed
1 avocado diced
3 T olive oil
2 T red wine vinegar
Salt and pepper to taste
fresh dill chopped
lemon juice
dash of Tabasco

Mix all ingredients in a large pitcher. Let sit overnight in fridge.
