Best Ever Cupcakes


My Gramma , Noella, ( she was born and passed away on Christmas Eve ) was an amazing baker. She made delicious cookies and squares. Her cinnamon buns were the best as were her dinner rolls. But I loved her cupcakes!


It is a simple white cake recipe with butter cream icing.


Sift into a large bowl -




1 1/4 cup of flour
2/3 cup white sugar
2 t baking powder
1/2 t salt



Add
1/3 cup butter
1/2 cup milk
1 t vanilla

Beat for 2 mins. Add 1 egg. Beat 1 min longer.





Fill cup cake pans. Bake at 350 for 15 mins. For mini cupcakes bake for 7-8 minutes.  Makes 24 mini cupcakes or 12 regular cupcakes.

Butter Cream Icing:

Cream 1 cup of butter. Add 1 t vanilla and beat well. Gradually add 3 cups of icing sugar and add 1 - 2 tablespoons of milk to achieve spreading consistency. Generously frost cupcakes and decorate.
