Next to Graham Wafer Bark, my Chewy Ginger Cookies are my son's favourite Christmas cookie. Soft and chewy, with a spicy ginger flavor, these cookies are a nice alternative to a gingerbread man.
Cream 3/4 cup of butter with 1 cup white sugar and 1 t vanilla. Beat until light and fluffy.
Add 1 egg and 1/4 cup of molasses and beat well. Add 3/4 t of minced ginger.
In a separate bowl, combine 2 1/4 cup flour, 2 t baking soda, 1 t salt, 1 t cinnamon, 1/2 t ground cloves. Add to butter mixture. Chill for at least 1 hour.
Shape into 3/4" balls and roll in white sugar to coat.
Place 2 " apart on cookie sheet. Bake @ 375 degrees for 7-8 minutes.
