Happy Canada Day!

This weekend we hosted a special celebration to welcome friends back to our great country after living in Nassau for 25 years. What a perfect way to celebrate Canada Day!

A group of close friends and family gathered in our backyard and enjoyed a perfect summer evening. Our menu consisted of Canadian burgers and salad. Dessert was Strawberry Shortcake starring delicious local berries. It is a favourite and I am happy to share it.

Strawberry Shortcake

4 eggs
1 t baking powder
1/4 t salt
3/4 cup white sugar
1 teaspoon vanilla
3/4 sifted flour
2 - 3 cups whipped cream ( sweetened with 1/4 cup icing sugar and 1 t vanilla )
1- 2 quarts sliced strawberries

Combine eggs, baking powder, vanilla and salt and beat until light and fluffy. Gradually add sugar and beat until thick and pale yellow in colour.

Gently fold in flour.

Grease a jelly roll pan and line with parchment paper. Grease and flour parchment paper. Pour batter into pan. Bake at 400 degrees for 10 - 12 minutes.

Remove from oven and cool. Carefully peel off parchment paper and cut cake in half ( lengthwise or crosswise depending on your cake plate).

Place the first layer on the cake plate and spread with 2/3 of the whipped cream. Arrange sliced strawberries on top.

Place the next cake layer on top. Cover with whipped cream and decorate to look like a Canadian Flag.
